Get Fresh

It's about this time of year that we in Britain consider debunking into the garden to expose pasty limbs and hobbit-like feet to the warmer air. Pinning all our hopes on meteorological clemency, we plan our weekend barbecues and even entertain the idea that salad might constitute actual food. However, more often than not, the weather lets us down and a planned afternoon sur l'herbe becomes a quick Pimms before the familiar plip plip of raindrops moves the whole shebang indoors again.

All the more reason to get the drinks just right. After all, if you only have time for a drink in the garden, you want to make sure it's absolutely delicious and will go some way to assuage the disappointment of another Great British wash out - and of course, if the weather does hold out, then you'll have time to try all three of these fabulous, fresh and fruity cocktails.

The Jardiniére cocktail, as the name suggests, takes its inspiration from the garden, combining the flavours of strawberry, rose and lavender in a subtly floral, long drink with plenty of fruit and fizz. The recipe calls for Chase Vodka because it is incredibly smooth with a slight sweetness and creamy finish that comes from the traditional and artisanal distillation of the King Edward and Lady Claire potatoes it is produced from. Incidentally, it is also gluten free which will be welcome news to Coeliac sufferers.

Lavender syrup is available to buy online, but can be made quite simply at home and will last for months in an airtight container. You can use fresh lavender flowers if they are in season or dried, culinary lavender which can be purchased all year round from Lavender World.

Jardiniére

2oz Chase Vodka
4 strawberries
2 dashes of rosewater
Prosecco to top up
Sprig of lavender to garnish

Chop the strawberries into quarters and set four aside.
Add the remaining quarters to the bottom of a shaker and squish to a pulp.
Add the vodka, rosewater and lavender syrup and mix together.
Shake the mixture along with a handful of ice and strain into an ice filled tall glass.
Pop in the remaining pieces of strawberry and top up carefully with Prosecco.
Stir with a swizzle stick to mix and garnish with a sprig of lavender.
Tip - if you gently smack the lavender between your palms before garnishing, it will release it's beautiful, floral scent.

Clementines are characteristically sweeter than their larger cousins, the orange, which makes them perfect for this gin based cocktail. The addition of elderflower liqueur adds a floral element and a touch of thyme gives an extra fragrant layer to the drink, all of which combine to create a very fresh, light flavour. Whitely Neil Gin is a good fit with this drink as the Baobab tree fruit and aromatic cape gooseberries in its distillation, give it plenty of fruity, citrus zest.

Clem and Thyme

2oz Whitely Neil Gin
1/2oz Chase Elderflower Liqueur
2 sweet clementines
Small sprig of fresh thyme
Clementine wheel to garnish

Gently muddle (squish) the thyme along with the gin and elderflower in the bottom of a cocktail shaker.
Squeeze the juice from the clementines and add to the shaker along with a handful of ice.
Shake hard and strain into a tall glass filled with ice and garnish with the citrus wheel.

Creamy cocktails are not usually considered to be particularly fresh and light, but the proliferation of fresh raspberries in this cocktail make it surprisingly refreshing and utterly delicious. The inspiration came from the traditional Scottish dessert of the same name, that like this cocktail, features raspberries, honey, cream and whisky. In addition to whisky, this drink features Absolut Raspberi vodka which is naturally flavoured and stops the whisky overpowering the mix. Like the dessert, the whisky is a subtle undertone, which isn't to say that you shouldn't pick your scotch carefully. In this instance, nothing too peaty or smokey, but a light, honeyed single malt such as Jura Origin is ideal.

Cranachan

1oz Jura Origin single malt whisky
1oz Absolut Raspberi
2 tsp Tiptree Scottish Heather Honey
8-10 raspberries
1oz single cream

Set aside 3 or 4 raspberries to add whole to the glass.
Press the remaining raspberries through a fine sieve to remove the pips and collect the juice in the bottom of a shaker.
Add the rest of the ingredients with a handful of ice and shake hard to mix.
Strain into a tall glass filled with ice and the remaining raspberries.

In an ideal world, you'll be enjoying these cocktails under the shade of a parasol on a glorious, sunny afternoon as the smell of barbecuing something or other wafts across the garden, but fear not, they taste equally great, huddled round the kitchen table, wrapped in a picnic rug...

Pop goes Christmas

There doesn't need to be much of an excuse to crack open the fizz in the TG household, but I know that I won't be alone in popping a cork or two this Christmas. For many, Christmas morning will start with a Bucks Fizz, which is fairly innocuous as Champagne cocktails go, being comprised in half from freshly squeezed orange, but all the same, a step too far far me. Much as I love a tipple, breakfast, (even on Christmas morning), is too early for Mr TG and I who will be sticking to a nice pot of tea until midday, when the bacchanalia begins in earnest. Whilst I've had little to do with the festive preparations this year, having been too busy, painting glass, I have found time to road test a few, new Champagne Cocktails that might just take your fancy this Christmas, although I suggest that unless you want to wake up, face down in a plate of turkey, you join me in holding off until midday…

This first cocktail is a nice alternative to the classic Buck's Fizz and has a gorgeously, festive hue that makes it perfect for a Christmas Day tipple.

Melba Fizz

Ingredients
1 oz Gin (Pinkster would be perfect)
1 oz Catron Creme de Pêche de Vigne
6 fresh raspberries
Champagne or Cava

Muddle (squish) the raspberries in the bottom of your cocktail shaker, along with the Creme de Pêche de Vigne.
Add the gin, a little ice and give it a quick shake just to cool the liquid.
Double strain the cocktail into a chilled glass and then transfer to a chilled champagne flute. This will avoid spilling the cocktail down the side of the glass if your champagne flutes are narrow at the top.
Carefully top up with fizz, avoiding overspill and then briefly stir with a swizzle stick to mix the drink.

This next cocktail is a very delicate shade of green with an equally delicate flavour. The trick is not to overdo the Blue Curaçao, thus lending the drink a hint of orange and a beautiful sea green shade.

Hummingbird

Ingredients
1 oz Gin
1/2 oz Blue Curaçao
1 tsp fresh lime juice
Champagne or Cava
Twist of lime zest to garnish

Add the Gin, Blue Curaçao and lime to a large mixing glass, with ice and stir briefly to mix the liquids.
Strain the mixture into a chilled champagne flute and top with fizz.
Twist the strip of lime zest over the cocktail to release the citrus aroma and garnish the drink.

Now tequila may not be a drink you immediately associate with Christmas or with Champagne for that matter, but dispel those preconceptions and open your mind and your tastebuds to this delicious concoction that combines these two elements in a surprisingly light and pleasant quaff.

Angelic

Ingredients
1 oz tequila resposado
1 oz Chase Elderflower Liqueur
6 grapes (skins removed)
Champagne or Cava to top up
2 slices of grape to garnish

The easiest way to remove the grapes from their skins is to cut them in half and then hold the halved grape between your forefinger and thumb and pinch them together. The grape should just pop out. If not you can remove any little bits of skin by double straining the drink at the end.

Muddle (squish) the grapes with the tequila in the bottom of a shaker.
Add the Chase Elderflower Liqueur, a little ice and shake briefly to chill the liquids.
Double strain the cocktail into a chilled champagne flute and pop in the sliced grape.
Top up with chilled Champagne or Cava.

This final cocktail uses just a taste of Creme de Violette to give a floral note without straying into parma violet territory. The combination of Absolut Raspberri vodka and fresh raspberries keep the flavour fresh and light and a couple of dashes of simple syrup are all this needs to sweeten it.

Raspberri Royale

Ingredients
1 oz Absolut Raspberri
1 tsp Creme de Violette
2 tsp simple syrup
4 raspberries
1 raspberry for garnish

Muddle (squish) the raspberries with the vodka and add everything else except the garnish in the bottom of the shaker.
Add a handful of ice and shake  to cool the liquids.
Double strain the cocktail into a chilled champagne glass and pop a raspberry in the bottom of the flute.
Top up very slowly with Champagne or Cava to avoid the cocktail fizzing over.
Gently stir with a swizzle stick.

I hope that you have a wonderful holiday season and remember; a Champagne cocktail is not just for Christmas….

A Cocktail a Day (surviving the school holidays)

Now I know it is highly irresponsible to advocate daily drinking and no doubt some will be up in arms at the suggestion that spending time with one's children for six l-o-n-g weeks is anything short of idyllic, but here at TG HQ, we have discovered that the evening is far less fraught with tension after a cocktail (or two). So if you are looking around the war-torn slum that used to be your living room and counting down the days until September, then might I suggest taking one of these on a daily basis until the little blighters are back in full time education.

This first one I named Raspberry Refresher because Mr TG thought it tasted a bit like Refresher sweets, which is a good thing apparently...

 Raspberry Refresher

Ingredients

2 oz Absolut Raspberri Vodka
1/2 oz Giffards Creme de Framboises
1 oz triple sec
1 1/2 oz fresh lemon juice
Sparkling water to top up
Fresh raspberry to garnish

Shake all of the ingredients (apart from the sparkling water) over ice.
Strain into an ice filled tumbler and top up with sparkling water.
Garnish with a fresh raspberry.

I absolutely loved this next cocktail as the bitter orange taste of Campari really works well with the Chase Marmalade Vodka. If you haven't got a bottle of this, I suggest you purchase one immediately as it is rather wonderful. If you want to find out a little more about all things 'Chase' (and who wouldn't?), then click here to find out all about my visit to the Chase Distillery.

Bitter Orange

1/2 oz Campari
1 tsp icing sugar
2 oz soda

Add the Marmalade Vodka, Campari and sugar to a shaker, half filled with ice.
Shake hard and strain into a chilled tumbler with ice.
Top up with 2 oz soda and stir gently to mix the drink.
Garnish with a twist of lemon zest, allowing the zest to spray the top of the drink to release the citrus aroma.

This next drink is a very simple cocktail to make and with an incredible taste of rhubarb and custard sweets.

 Rhubarb Martini

2 oz Chase Rhubarb Vodka
1 oz fresh lemon juice
1 tsp icing sugar
Slice of strawberry to garnish

Add all of the ingredients to a shaker, half filled with ice.
Shake hard until the outside of the shaker is totally frosted and the cocktail starts to form ice chips inside.
Strain into a chilled martini glass and garnish with a slice of strawberry

Our next cocktail is rather sweet, but it's a great introduction to bourbon, if you are a little unsure as to whether or not you like it. Also, you could add a little sparkling water at the end if you find it too intense. I preferred it a little watered down, but Mr TG liked it just the way it was.

Sweet Bourbon

1 oz Buffalo Chase Bourbon
1 oz triple sec
1/2 oz Luxardos Maraschino Liqueur
1 oz fresh lemon juice
Strip of lemon zest to garnish
Cocktail cherry (or frozen cherry) to garnish

Add all of the ingredients, except the garnish, to a shaker, filled with ice and shake hard for about 20 secs.
Strain into an ice filled tumbler.
Garnish with a strip of lemon zest and a cocktail cherry.

 Sweet Bourbon

Generally I find that if a drink has lime and mint in it, then I'm going to love it and Mojitos are always a failsafe. This is yet another delicious variation on the theme. If you would like some more great Mojito recipes, click here.

Blueberry Mojito

2 oz Flor de Caña Rum
1 oz fresh lime juice
12 small blueberries
3/4 oz simple syrup
8 mint leaves
Sparkling water to top up

Gently muddle the mint and blueberries in the bottom of the shaker.
Add the rum, syrup, lime and half fill with ice.
Shake vigorously for about 20 secs and strain into a large hi ball glass filled with ice.
Top up with sparkling water and stir gently to mix the drink.

Our next cocktail is must for gin lovers with a taste for the floral i.e. me...

Amnesia Rose

2 oz William Chase GB Gin
1 oz lime juice
2 oz Fentimans Rose Lemonade
1/4 oz simple syrup

Add all of the ingredients to a cocktail shaker (except for the garnish).
Half fill the shaker with ice and shake hard for about 20 secs.
Strain into a chilled martini glass and garnish with a sprig of mint

Hint - gently slap the mint between your palms, just before garnishing, to release the minty aroma.

This last cocktail of the week has mint, it has lime, it has Chase Elderflower Liqueur - what a great way to finish!

Elder King

1 oz Kings Ginger Liqueur
1 oz Chase Elderflower Liqueur
1 oz fresh lime juice
8 mint leaves
Sparkling water to top up

Gently muddle the mint with the lime juice in the bottom of the cocktail shaker.
Add the liqueurs and half fill with ice.
Shake hard and strain into a chilled highball glass half filled with crushed ice
Top up with sparkling water and stir gently to mix the drink
Garnish with an extra wedge of lime
